Carrot Growing and Harvesting Tips

Carrots are easiest to grow in a garden with deep, loose soil. Baby carrots are usually ready to harvest 50 to 60 days from the planting date. Mature carrots are usually ready in about 75 days. Consult your seed packet. Loosen the soil with a garden fork before harvesting. Cut off the tops 1/4 to 1/2 inch from the top of the carrot and rinse and dry the roots before storage. Clean carrots may be stored in the refrigerator for two to four weeks. Do not store near apples or pears.

Glazed Mini Carrots

Ingredients: 3 cups mini carrots 1/3 cup water 1 tablespoon honey 2 teaspoons butter 1/4 teaspoon salt 1 tablespoon lemon juice Freshly ground pepper, to taste 2 tablespoons chopped fresh parsley Combine carrots, water, honey, butter and salt in a large skillet. Bring to a simmer over medium-high heat. Cover and cook until tender, 5-7 minutes. Uncover and cook, stirring often, until the liquid is a syrupy glaze, 1-2 minutes. Stir in lemon juice & pepper. Sprinkle parsley and serve.
